Auntie Tracy sent me this recipe - she makes them for Lou's playdates.
I used kefir instead of the yogurt/buttermilk. It seemed like a fair compromise, and it was in the refrigerator. I also made a 2/3 batch, which made a lot of scones!
3 cups of all purpose flour
1 tablespoon baking powder
2 sticks of unsalted butter, at room temperature
¼ cup plus 2 tablespoons sugar
3 eggs
1/3 cup buttermilk or plain yogurt or kefir
½ cup semi sweet chocolate chips
- Mix flour and baking power in a bowl.
- In the large bowl of an electric mixer, beat butter on high speed until creamy.
- Add sugar and beat 3 to 5 minutes until pale and fluffy.
- Add eggs, one at a time, beating after each.
- Scrape sides of bowl; reduce speed to low.
- Add flour mixture; mix only until blended.
- Scrape sides; add buttermilk and mix only until blended.
- Sprinkle chocolate chips over the batter and fold in.
- Scoop 1/4 cupfuls of dough onto ungreased cookie sheet. Place mounds 2 inches apart.
- Loosely cover dough with plastic wrap and refrigerate about 45 minutes.
- Turn oven on to 350 degrees and bake about 15 minutes.
- Turn oven down to 325 and bake about 13 minutes longer or until golden brown. Cool on wire rack.
