My bedtime reading is typically gardening books or cookbooks. Both are bad ideas because gardening books make me think about my big gardening plans and I can't sleep. Cookbooks just make me hungry, and I can't sleep. So, I was reading The Modern Baker, skipping the parts about treats. For bread making, the author recommends mixing the ingredients, letting them rest for 10 minutes, then kneading. I had read that tidbit somewhere else specific to a recipe, which is why I tried it with my last batch of bread. I have to say that I think that's what made my last loaf of bread close to perfection. I fully endorse the method!
Tomorrow is bread baking day. I hope to confirm my prior findings.
